Fitness trainer Jen Selter is ready for Halloween with her recipe for pumpkin pancakes!
The 30-year-old fitness guru doesn’t just love to exercise. She also loves to create healthy recipes too! She recently decided to get into the spirit of the season and share her recipe for healthy pumpkin pancakes before the spooky season really gets underway!
Fitness Trainer Jen Selter Shares Her Healthy Pumpkin Pancakes Recipe
Although many carve pumpkins for Halloween, not everyone thinks about eating them! According to Healthline, pumpkins are highly nutritious and packed with beta-carotene, a carotenoid that your body converts into vitamin A. Its high antioxidant content can help reduce the risk of chronic diseases and even lower cancer risk. It is also packed with potassium, vitamin C, and fiber, which can benefit heart health.
In her latest Instagram post, Jen donned a white crop top and black jeans as she assembled a long row of white ceramic bowls shaped like hearts on her counter. Each one contained a different ingredient for peak organization.
Jen combines most of the ingredients into her BlendJet and gives it a whirl before heading over to the stove to cook her pancakes. After topping them with chocolate chips, Jen does a little dance while waiting for them to cook.
After topping them with cream, she then cuts them in half to show off a delicious stack of hearty pancakes. She finishes it off with a few chopped walnuts and a drizzle of maple syrup. She heads out onto the balcony to dig into her breakfast, giving it two thumbs up of approval.
“Say hello to your new fall fav: Nutritious Pumpkin Pancakes that taste as good as they are for you! They’re packed with wholesome ingredients that make indulging feel good,” she wrote in the caption, adding the list of ingredients:
– ¾ cup pumpkin puree
– 2 large eggs
– 1 cup unsweetened coconut milk (or your fave milk)
– 2 teaspoons vanilla extract
– 2 tablespoons pure maple syrup or honey
– 1 tablespoon coconut oil
– 1/4 cup cottage cheese
– 1 ½ cups old-fashioned rolled oats
– 2 teaspoons baking powder
– 1/2 tablespoon ground cinnamon
– 1/2 teaspoon ground ginger
– 1 soaked date
She doesn’t share any cooking instructions, so fans will just have to watch the video in order to see how to make them! Fans were quick to praise her latest recipe, with one fan writing, “You’re adorable. Keep the great recipes coming girl!” Another follower exclaimed “LOVE IT JEN!” while other fans showered her post with compliments of “yummy” and “delicious.”

This Isn’t The Only Pancake Recipe That Jen Has Shared Lately!
Believe it or not, Jen actually started off the month by sharing an oat pancake recipe while wearing a purple gym fit. “Let’s kick-start our day with a yummy oat pancake recipe,” she wrote in the caption. “I’ve got a flavor-packed trick for you: I lay down those banana slices on the pan before pouring the mix, giving each bite an extra punch of banana goodness!
She made sure to write out a clear list of ingredients:
– 1 cup of oats (blended till they’re nice and floury)
– 1/4 cup of creamy cottage cheese
– 1 egg
– 1 tablespoon of honey
– 1/2 teaspoon of cinnamon
– 1/2 teaspoon of baking powder
– 1/2 teaspoon of vanilla extract
– 1/2 cup of your fav milk
– 1 big, ripe banana
– A quick spritz of cooking spray or a lil ghee/butter
She also added a few ideas for fun toppings, which include a drizzle of pure, fresh honey, fresh blueberries, or a little peanut butter. Of course, fans at home can top their pancakes however they choose!
